Jackalopes, Jack-o-lanterns and Soup, Oh my!

I listed this jackalope Feltidermy in my shop yesterday. It was sold within minutes and is on it’s way to the UK today! I am currently working on a custom one and will then be starting another with the embossed felt like I used for Macadamia Squirrel.

We celebrated Halloween by carving our pumkpins, roasting seeds and having butternut squash soup. I think our pumpkins turned out cute… his has the cute traditional face, mine has the kitty face.

~Butternut Squash Soup~

-roast one butternut squash; slice in 1/2, coat with olive oil, salt and pepper, cover with foil and bake at 375 for about 1 hour.

-sautee a 3 Tbs of minced onion and 1 clove mince garlic in 1 Tbs. butter in a sauce pan

-add about 1/2 tsp. each of dried sage, thyme, and Italian seasoning mix

-add 1 can or 1 1/2 cups stock of your choice

-scoop roasted squash out of shell into a bowl and mash, add mashed squash to stock mixture in pan

– allow to simmer for about 15 minutes or until it comes to thickness and heat of your desire

Oh, this is really good with a dab of sour cream and great bread. You can also follow this same process with pumpkin for a wonderful pumpkin soup. Enjoy!
